HEALTHY BREAKFAST
OMELETTE WITH MUSHROOM, CAPSICUM AND SPROUTS
INGREDIENTS:
- 8 eggs
- 10-12 mushrooms chopped
- 1 medium red capsicum chopped
- i cup mixed sprouts blanched
- salt to taste
- 4 tbsp oil
- 2 medium onions chopped
- 4 green chilies chopped
- Break two eggs in a bowl, add salt and beat well. Heat 1tbsp of oil in a non-stick pan, add 1/4th portion of onions and green chilies and saute for one minute.
- Add beaten eggs and mix. Sprinkle 1/4th portion each of mushrooms, red bell pepper and mixed sprouts. Cook till the egg sets and flip it. Cook on the other side for a minute.
- Serve immediately. Similarly prepare the other omelettes.
